Simple, flourless pancakes made in a blender, naturally sweetened with banana. Perfect for a healthy gluten-free breakfast or a toddler snack.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 tablespoon milk (optional, for thinner batter)

Instructions

  1. Combine all ingredients in a blender.
  2. Blend until smooth. If the batter is too thick, add milk one tablespoon at a time until desired consistency is reached.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve immediately.

Notes

  • For a sweeter pancake, add a teaspoon of maple syrup to the batter.
  • Add blueberries or chocolate chips for extra flavor.
