Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup BBQ sauce
1 cup chopped bell peppers (any color)
1 cup chopped onion
1 cup chopped zucchini
1 cup corn kernels (fresh or frozen)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste
Optional: 1/4 cup chopped fresh parsley for garnish
Instructions
Preheat your grill to medium-high heat or prepare your campfire coals.
In a large bowl, combine the chicken pieces, BBQ sauce, bell peppers, onion, zucchini, corn, garlic powder, paprika, salt, and pepper. Toss to coat everything evenly.
Tear off four large pieces of heavy-duty aluminum foil (about 18×12 inches each).
Divide the chicken and vegetable mixture evenly among the four foil pieces, placing it in the center of each.
Bring the sides of the foil up and over the mixture, then fold the edges tightly to create sealed packets. Ensure there are no gaps for steam to escape.
Place the foil packets directly on the grill grates or in the campfire coals.
Grill for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender. Cooking time will vary depending on the heat of your grill or campfire.
Carefully remove the packets from the grill. Let them rest for a minute before opening.
Open the packets carefully, being mindful of the hot steam.
Garnish with fresh parsley, if desired, and serve immediately.
Notes
For an oven option, preheat your oven to 400°F (200°C). Place the foil packets on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through.
You can prepare these packets ahead of time and store them in the refrigerator for up to 24 hours before grilling.
Feel free to customize the vegetables based on your preferences. Other great additions include broccoli florets, cherry tomatoes, or sliced carrots.
For a different flavor profile, try different BBQ sauce varieties or add a tablespoon of your favorite spice blend.
