A hearty, make-ahead casserole perfect for weekend brunches, tailgates, or holiday mornings. Layers of fluffy biscuits and savory sausage gravy create a comforting Southern dish.

  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (10.2 ounce) can refrigerated biscuits
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the breakfast sausage over medium-high heat until browned. Drain off excess grease.
  3. Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1 minute.
  4. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the gravy thickens. Stir in pepper and salt.
  5. Cut each biscuit into quarters.
  6. Spread half of the biscuit pieces evenly in the bottom of a 9×13 inch baking dish.
  7. Pour half of the sausage gravy over the biscuits.
  8. Sprinkle half of the cheddar cheese over the gravy.
  9. Repeat the layers with the remaining biscuits, gravy, and cheese.
  10. Bake for 20-25 minutes, or until the biscuits are golden brown and the casserole is bubbly.

Notes

  • For a make-ahead option, assemble the casserole but do not bake. Cover and refrigerate for up to 24 hours. Bake as directed, adding a few extra minutes to the cooking time if needed.
  • You can use any type of refrigerated biscuits you prefer.
  • Add a pinch of red pepper flakes to the gravy for a little heat.
  • Serve with a side of fruit for a complete brunch.
