2 cups broccoli florets, finely chopped
1 cup shredded cheddar cheese
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg, beaten
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the finely chopped broccoli florets, shredded cheddar cheese, panko breadcrumbs, grated Parmesan cheese, beaten egg, garlic powder, salt, and pepper.
Mix all ingredients until well combined. The mixture should hold together when pressed.
Shape the mixture into small tot shapes, about 1 inch in diameter.
Place the tots on the prepared baking sheet.
Bake for 15-20 minutes, or until golden brown and heated through.
Serve warm.
Notes
For a crispier tot, you can lightly spray them with cooking spray before baking.
These tots can be frozen before baking. Place them on a baking sheet until frozen, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the baking time.
