1.5 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp dried oregano
0.5 tsp garlic powder
Salt and black pepper to taste
1 cup cherry tomatoes, halved
4 oz fresh mozzarella, sliced
0.25 cup fresh basil leaves, torn
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels.
In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
Brush the chicken breasts with the olive oil mixture.
Place the chicken in a baking dish.
Scatter the halved cherry tomatoes around the chicken.
Bake for 20 minutes.
Remove the dish from the oven and top the chicken with mozzarella slices.
Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature reaches 165°F or 74°C).
Garnish with fresh basil leaves before serving.
Notes
You can pound the chicken breasts to an even thickness for more consistent cooking.
Add a drizzle of balsamic glaze over the finished dish for extra flavor.
