A fresh summer pasta salad featuring tomatoes, mozzarella, and basil. Perfect for potlucks, barbecues, and picnics.

Ingredients

  • 1 pound pasta
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella balls, halved or quartered
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, and chopped basil.
  3. In a small bowl, whisk together the olive oil and balsamic glaze.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For a more robust flavor, add a minced garlic clove to the dressing.
  • You can substitute cherry tomatoes with chopped ripe tomatoes.
  • Add grilled chicken or shrimp for a complete meal.
