A vibrant and zesty marinade perfect for grilling flank or skirt steak, ideal for summer carne asada tacos.

  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a bowl, whisk together orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, and cayenne pepper if using.
  2. Place your flank or skirt steak in a resealable bag or shallow dish.
  3. Pour the marinade over the steak, ensuring it is fully coated.
  4. Marinate in the refrigerator for at least 2 hours, or preferably 4-6 hours, turning the steak halfway through.
  5. Remove steak from marinade, discard excess marinade, and grill to your desired doneness.

Notes

  • For best flavor, marinate overnight.
  • This marinade is also excellent for chicken or pork.
  • Serve with warm tortillas and your favorite taco toppings.
