Easy no-bake granola bars packed with oats and peanut butter, perfect for a healthy snack or meal prep.

Ingredients

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine rolled oats, peanut butter, honey, chocolate chips (if using), and vanilla extract.
  3. Mix until all ingredients are well combined.
  4. Press the mixture evenly into the prepared baking pan.
  5. Refrigerate for at least 30 minutes, or until firm.
  6. Cut into bars and serve.

Notes

  • Store bars in an airtight container in the refrigerator for up to one week.
  • For a protein boost, add a scoop of your favorite protein powder to the mixture.
  • You can substitute almond butter or cashew butter for peanut butter.
