Easy make-ahead chicken salad pinwheels perfect for parties and tea sandwiches. These bite-sized rolls are filled with creamy chicken salad and your favorite mix-ins.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1/4 cup grapes, halved (optional)
  • 1/4 cup toasted pecans or walnuts, chopped (optional)
  • Salt and black pepper to taste
  • 4 large flour tortillas

Instructions

  1. In a medium bowl, combine shredded chicken, mayonnaise, and Greek yogurt.
  2. Add chopped celery and red onion. Stir in grapes and nuts if using.
  3. Season with salt and pepper to taste. Mix well.
  4. Lay out one tortilla. Spread a thin, even layer of the chicken salad mixture over the entire surface, leaving a small border on one edge.
  5. Tightly roll up the tortilla, starting from the edge opposite the border.
  6. Repeat with the remaining tortillas and chicken salad.
  7. Wrap each rolled tortilla tightly in plastic wrap. Refrigerate for at least 1 hour to firm up.
  8. Before serving, unwrap the tortillas and slice them into 1-inch thick pinwheels.

Notes

  • For a gluten-free option, use gluten-free tortillas.
  • You can substitute sour cream for Greek yogurt if preferred.
  • Add other mix-ins like diced apple, dried cranberries, or fresh herbs for variety.
  • These can be made up to 24 hours in advance.
