A fresh garden salad with cucumbers, tomatoes, and onions in a creamy dill dressing. This quick salad is perfect for make-ahead meals.

Ingredients

  • 1 large cucumber, thinly sliced
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Combine sliced cucumber, halved cherry tomatoes, and sliced red onion in a large bowl.
  2. In a small bowl, whisk together Greek yogurt, chopped dill, lemon juice, and Dijon mustard.
  3. Season the dressing with salt and pepper.
  4. Pour the dressing over the vegetables and toss gently to coat.
  5. Chill for at least 15 minutes before serving to allow flavors to meld.

Notes

  • For a lighter version, use non-fat Greek yogurt.
  • This salad can be made a day in advance and stored in the refrigerator.
