Bread-free sandwiches using hollowed cucumbers stuffed with deli meats and cheese for keto lunches.

Ingredients

  • 2 large cucumbers
  • 8 slices deli turkey
  • 8 slices deli ham
  • 4 slices provolone cheese
  • 4 slices Swiss cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried dill
  • Salt and black pepper to taste

Instructions

  1. Cut cucumbers in half lengthwise. Scoop out the seeds with a spoon to create a hollow channel.
  2. In a small bowl, mix mayonnaise, Dijon mustard, and dill. Season with salt and pepper.
  3. Spread the cucumber halves with the mayonnaise mixture.
  4. Layer turkey, ham, provolone, and Swiss cheese into the cucumber channels.
  5. Serve immediately.
