12 large eggs
1/2 cup milk
1 pound breakfast sausage
1 cup chopped onion
1 cup chopped bell pepper
1 teaspoon salt
1/2 teaspoon black pepper
12 (10-inch) flour tortillas
2 cups shredded cheddar cheese
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can diced green chilies
Instructions
Cook sausage in a large skillet over medium heat until browned. Drain grease.
Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Whisk eggs and milk in a bowl. Pour into the skillet with the sausage, onion, and pepper. Cook, stirring, until eggs are set. Season with salt and pepper.
Warm tortillas according to package directions.
Spoon egg mixture onto tortillas. Top with cheese, black beans, and green chilies.
Fold in the sides of the tortillas, then roll up tightly.
Wrap each burrito individually in plastic wrap, then foil.
Freeze for up to 3 months.
To reheat, remove foil and plastic wrap. Wrap in a paper towel and microwave on high for 1-2 minutes, or until heated through.
Notes
For best results, let burritos cool completely before wrapping and freezing.
