A classic fresh peach cobbler served warm with vanilla ice cream, perfect for peach season.

  • 6 cups fresh peaches, sliced (about 810 medium peaches)
  • 1/2 cup granulated sugar, plus more for sprinkling
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches. Pour the peach mixture into a 9×13 inch baking dish.
  3. In a separate medium bowl, whisk together 1 cup flour, 1/2 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined. Do not overmix.
  6. Drop spoonfuls of the cobbler topping evenly over the peach mixture in the baking dish. Sprinkle a little extra sugar over the topping, if desired.
  7. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let the cobbler cool for at least 10-15 minutes before serving.
  9. Serve warm with a scoop of vanilla ice cream.

Notes

  • For an even richer flavor, you can add 1/4 teaspoon of almond extract to the peach mixture.
  • If your peaches are not very sweet, you may need to add a little more sugar to the filling.
  • You can use frozen peaches if fresh peaches are not available, but be sure to thaw them completely and drain off any excess liquid before using.
