  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large pita breads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese (optional)
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat your grill or a grill pan to medium-high heat.
  4. Thread the marinated chicken onto skewers if using. Grill the chicken for 8-10 minutes, turning occasionally, until cooked through and lightly charred. If not using skewers, cook the chicken directly on the grill or grill pan.
  5. While the chicken is grilling, warm the pita breads on the grill for about 30 seconds per side, or until soft and pliable.
  6. To assemble the gyros, spread a generous amount of tzatziki sauce on each warm pita.
  7. Top with grilled chicken, shredded lettuce, diced tomatoes, and sliced red onion.
  8. Sprinkle with feta cheese if desired.
  9. Fold the pita in half and serve immediately.

  • For best flavor, marinate the chicken for at least 2 hours.
  • You can substitute chicken breasts for thighs, but adjust grilling time to prevent drying out.
  • Serve with extra tzatziki sauce on the side for dipping.
