A creamy and sweet macaroni salad with pineapple and ham, perfect for picnics and potlucks.

Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup diced ham
  • 1/4 cup finely chopped onion
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook macaroni according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine mayonnaise, crushed pineapple, diced ham, chopped onion, sweet pickle relish, apple cider vinegar, salt, and pepper.
  3. Add the drained macaroni to the bowl and mix well to combine.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

  • For a tangier salad, increase the apple cider vinegar.
  • You can substitute cooked chicken or turkey for the ham.
  • Add shredded carrots or celery for extra crunch.
  • This salad is best made a day in advance.
