A creamy and flavorful chicken dish with sun-dried tomatoes, perfect for a romantic dinner.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Cut chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Add minced garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  6. Stir in chopped sun-dried tomatoes and cook for 1 minute.
  7. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  8. Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly.
  9. Season sauce with salt and pepper to taste.
  10. Return chicken to the skillet and spoon sauce over it.
  11. Simmer for 2-3 minutes to heat the chicken through.
  12. Garnish with fresh basil or parsley before serving.

Notes

  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
  • For a richer flavor, use half-and-half instead of heavy cream.
  • Adjust red pepper flakes to your spice preference.
