- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil or parsley, chopped, for garnish
- Cut chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Add minced garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
- Stir in chopped sun-dried tomatoes and cook for 1 minute.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly.
- Season sauce with salt and pepper to taste.
- Return chicken to the skillet and spoon sauce over it.
- Simmer for 2-3 minutes to heat the chicken through.
- Garnish with fresh basil or parsley before serving.

- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
- For a richer flavor, use half-and-half instead of heavy cream.
