Easy and refreshing no-bake strawberry cheesecake bars perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry jam or preserves
  • 1/2 cup fresh strawberries, sliced (optional, for garnish)

Instructions

  1. In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and stir until crumbs are evenly moistened. Press mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper.
  2. In a large bowl, beat softened cream cheese with an electric mixer until smooth. Gradually beat in powdered sugar until well combined. Stir in vanilla extract.
  3. Spread half of the cream cheese mixture evenly over the graham cracker crust. Dollop spoonfuls of strawberry jam over the cream cheese layer. Gently swirl the jam into the cream cheese with a knife or toothpick.
  4. Spread the remaining cream cheese mixture over the jam layer. Cover the pan with plastic wrap.
  5. Refrigerate for at least 4 hours, or until firm.
  6. Cut into bars before serving. Garnish with fresh strawberries if desired.

Notes

  • For a firmer crust, you can bake it at 350°F (175°C) for 8-10 minutes before adding the filling. Let it cool completely before proceeding.
  • Ensure your cream cheese is fully softened to avoid lumps in the filling.
  • You can use other fruit preserves like raspberry or blueberry for a different flavor.
