Ingredients
Scale
6 cups fresh peaches, sliced (about 8–10 medium)
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1 large egg, lightly beaten
1 tablespoon milk
Instructions
Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish or a 10-inch cast-iron skillet.
In a large bowl, toss the sliced peaches with 1/2 cup sugar, 1/4 cup flour, lemon juice, cinnamon, and nutmeg. Pour the peach mixture into the prepared baking dish or skillet.
In a separate bowl, whisk together 1 cup flour, 1/2 cup sugar, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
In a small bowl, whisk together the egg and milk. Add this to the flour mixture and stir until just combined.
Drop spoonfuls of the cobbler topping evenly over the peach mixture.
Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let cool slightly before serving.
Notes
Serve warm with vanilla ice cream or whipped cream.
For a cast-iron peach cobbler, ensure your skillet is well-seasoned.
If your peaches are very ripe, you may need to slightly reduce the sugar.
This recipe is a great way to use seasonal fruit, similar to a summer fruit crumble.
