Quick and easy pizza quesadillas made with tortillas, cheese, and pepperoni, perfect for a fast meal.

Ingredients

  • 8 large flour tortillas
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 2 tablespoons olive oil or butter for cooking

Instructions

  1. Spread marinara sauce evenly over four of the tortillas, leaving a small border.
  2. Sprinkle mozzarella cheese over the sauce.
  3. Arrange pepperoni slices over the cheese.
  4. Top with the remaining four tortillas.
  5. Heat a large skillet or griddle over medium heat. Add a little olive oil or butter.
  6. Carefully place one or two quesadillas on the hot surface.
  7. Cook for 3-4 minutes per side, until the tortilla is golden brown and crispy, and the cheese is melted and gooey.
  8. Remove from the skillet, let cool slightly, and cut into wedges.

  • Serve with your favorite dipping sauces like ranch or extra marinara.
  • For a crispier quesadilla, use a panini press or cook in a dry skillet.
  • You can add other pizza toppings like mushrooms, onions, or olives.
