2 tablespoons pumpkin spice syrup (or to taste)
For the Vanilla Sweet Cream:
1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
1 tablespoon vanilla syrup
1 tablespoon powdered sugar
Instructions
Make the Pumpkin Spice Syrup: Combine water, sugar, pumpkin puree, and pumpkin pie spice in a saucepan. Heat over medium heat, stirring until sugar dissolves. Bring to a simmer and cook for 5 minutes, stirring occasionally. Remove from heat and stir in vanilla extract. Strain through a fine-mesh sieve, pressing on solids. Let cool completely.
Make the Vanilla Sweet Cream: In a small bowl, whisk together heavy cream (or coconut milk), vanilla syrup, and powdered sugar until thickened.
Assemble the drink: Fill a glass with ice. Add cold brew concentrate, milk, and pumpkin spice syrup. Stir to combine.
Top with the vanilla sweet cream.

Store leftover pumpkin spice syrup in an airtight container in the refrigerator for up to 2 weeks.
