A moist and tender pumpkin spice cake perfect for fall birthdays, Friendsgiving, and holiday potlucks, topped with a rich cream cheese frosting.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15 ounce) can pumpkin puree
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a separate bowl, whisk together the granulated sugar, vegetable oil, eggs, pumpkin puree, buttermilk, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes cool, prepare the frosting. In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
  9. Beat in the vanilla extract. Gradually add the powdered sugar, mixing until well combined and fluffy.
  10. Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top. Frost the top and sides of the entire cake.

Notes

  • For a make-ahead option, bake the cake layers one day in advance and store them, tightly wrapped, at room temperature. Frost the cake just before serving.
  • You can decorate the cake with chopped pecans or a sprinkle of cinnamon for extra flavor and visual appeal.
  • Ensure your cream cheese and butter are at room temperature for the smoothest frosting.
