  • 1 lb ground beef (80/20)
  • 8 small corn tortillas
  • 4 slices American cheese
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp pickle relish
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp vegetable oil
  • Optional toppings: shredded lettuce, diced onions, pickles

Instructions

  1. In a small bowl, mix mayonnaise, ketchup, mustard, pickle relish, garlic powder, and onion powder. Set aside.
  2. Divide ground beef into 8 equal portions. Flatten each portion into a thin patty. Season generously with salt and pepper.
  3. Warm the corn tortillas according to package directions.
  4. Heat vegetable oil in a large skillet or griddle over medium-high heat.
  5. Place 2-3 beef patties in the hot skillet. Press down firmly with a spatula to smash them thin. Cook for 1-2 minutes until browned and crispy.
  6. Flip the patties and immediately place a slice of American cheese on top of each. Cook for another minute until the cheese is melted.
  7. Remove the smashed burger patties from the skillet.
  8. Place a smashed burger patty onto each warm tortilla.
  9. Top with the special sauce and any desired optional toppings.
  10. Serve immediately.

  • For a crispier taco, ensure your skillet is hot before smashing the burgers.
  • You can prepare the special sauce ahead of time and store it in the refrigerator.
  • Experiment with different cheeses like cheddar or Monterey Jack.
  • If you don’t have corn tortillas, flour tortillas also work well.
