  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 2 cups graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press half of the cookie dough evenly into the bottom of the prepared baking pan.
  7. Sprinkle the chocolate chips and mini marshmallows evenly over the cookie dough layer.
  8. Sprinkle the graham cracker crumbs over the marshmallows.
  9. Crumble the remaining cookie dough over the graham cracker layer.
  10. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For extra gooeyness, you can add a layer of marshmallow fluff between the chocolate chips and graham cracker crumbs.
  • Ensure your butter is softened, not melted, for the best cookie bar texture.
  • You can toast the marshmallows slightly under the broiler for a more authentic s’mores flavor, but watch them closely to prevent burning.
