- 2 large zucchinis
- 1 lb ground beef
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Preheat your oven to 375°F (190°C).
- Cut zucchinis in half lengthwise. Scoop out the seeds to create a boat shape.
- In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
- Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Fill the zucchini boats with the meat mixture.
- Top with mozzarella cheese.
- Place filled zucchini boats in a baking dish. Add about 1/2 inch of water to the bottom of the dish.
- Bake for 25-30 minutes, or until zucchini is tender and cheese is melted and bubbly.
Notes
- For a vegetarian option, substitute the ground beef with cooked lentils or quinoa.
- You can add other vegetables like mushrooms or bell peppers to the meat mixture.
- Serve with a side salad for a complete meal.
