2 cups cubed seedless watermelon
8–10 fresh mint leaves
1 oz fresh lime juice (about 1/2 lime)
1 oz simple syrup (optional, adjust to taste)
2 oz white rum (optional)
Ice cubes
Mint sprigs for garnish
Watermelon wedge for garnish
Instructions
If using a blender: Combine watermelon, mint leaves, lime juice, simple syrup (if using), and rum (if using) in a blender. Blend until smooth.
If muddling: In a sturdy glass, gently muddle the mint leaves with the lime juice and simple syrup (if using). Add watermelon chunks and muddle lightly to release juice.
Add rum (if using) to the glass.
Fill the glass with ice.
Pour the blended watermelon mixture (from step 1) over the ice, or strain the muddled mixture (from step 3) into the glass filled with ice.
Stir gently to combine.
Garnish with a mint sprig and a watermelon wedge.
Notes
For a mocktail, simply omit the rum.
Adjust simple syrup to your sweetness preference.
For a smoother drink, strain the blended mixture through a fine-mesh sieve.
You can prepare the watermelon mixture ahead of time and store it in the refrigerator for up to 24 hours.
