Crispy, 5-ingredient zucchini fritters that are perfect for hiding extra vegetables. You can make them in an air fryer or on the stovetop.

  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup all-purpose flour (or gluten-free blend)
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped fresh chives or green onions
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil or cooking spray, for cooking

Instructions

  1. In a medium bowl, combine the grated zucchini, flour, eggs, chives, salt, and pepper. Mix until just combined.
  2. For pan-frying: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Drop spoonfuls of the batter into the hot skillet, flattening them slightly. Cook for 3-4 minutes per side, until golden brown and cooked through. Add more oil as needed.
  3. For air frying: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Place spoonfuls of the batter into the basket, ensuring they don’t touch. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  4. Serve immediately with your favorite dipping sauce.

Notes

  • For gluten-free fritters, use a gluten-free all-purpose flour blend.
  • You can add other finely chopped vegetables like carrots or bell peppers.
  • Serve with a side of Greek yogurt dip, sriracha mayo, or a simple lemon-herb sauce.
