Instructions
In a medium bowl, combine the grated zucchini, flour, eggs, chives, salt, and pepper. Mix until just combined.
For pan-frying: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Drop spoonfuls of the batter into the hot skillet, flattening them slightly. Cook for 3-4 minutes per side, until golden brown and cooked through. Add more oil as needed.
For air frying: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Place spoonfuls of the batter into the basket, ensuring they don’t touch. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
