Instructions

  1. Wash and trim the ends of the zucchini. Cut the zucchini into 1-inch thick rounds or bite-sized pieces.
  2. Place the cut zucchini in a colander. Sprinkle with 1/4 teaspoon of salt and let it sit for 10 minutes. This draws out excess moisture, which is key for crispiness.
  3. Pat the zucchini pieces completely dry using paper towels. Discard the liquid.
  4. In a medium bowl, toss the dry zucchini with olive oil until lightly coated.
