  • 2 cups water or milk (dairy or almond milk works well)
  • 1 large apple, peeled and diced
  • 1 tablespoon butter or coconut oil
  • 1 teaspoon ground cinnamon, divided
  • 2 tablespoons brown sugar, divided
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup chopped pecans (for topping)
  • Maple syrup (for serving)

Instructions

  1. Combine the diced apple, butter, 1 tablespoon of brown sugar, and 1/2 teaspoon of cinnamon in a small saucepan. Cook over medium heat for 5 to 7 minutes, stirring occasionally, until the apples soften slightly. Remove the apples from the pan and set them aside.
  2. In the same saucepan, combine the rolled oats, water or milk, remaining 1/2 teaspoon of cinnamon, remaining 1 tablespoon of brown sugar, and salt.
  3. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. Simmer for 5 to 7 minutes, stirring frequently, until the oats absorb the liquid and become creamy. Stir in the vanilla extract during the last minute of cooking.
  4. Divide the oatmeal into bowls. Top each serving with the sautéed cinnamon apples.
  5. Garnish with chopped pecans and drizzle with maple syrup before you serve this cozy fall breakfast recipe.
