A crowd-pleasing brunch casserole using bagels, eggs, cheese, and optional meats. This make-ahead dish is perfect for holidays or weekend brunches.

  • 12 bagels, cut into 1-inch cubes
  • 1 lb breakfast sausage or bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped scallions
  • 6 large eggs
  • 3 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place bagel cubes in a greased 9×13 inch baking dish.
  2. Sprinkle crumbled sausage, cheddar cheese, and scallions over the bagels.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Pour the egg mixture evenly over the bagels and other ingredients.
  5. Cover the dish and refrigerate for at least 4 hours or overnight.
  6. Preheat oven to 350°F (175°C).
  7. Bake, uncovered, for 45-55 minutes, or until the casserole is set and golden brown.
  8. Let stand for 10 minutes before serving.

Notes

  • For a crispier top, you can uncover the casserole for the last 15 minutes of baking.
  • Dollop cream cheese over the casserole before serving for extra richness.
  • Swap bagels for croissants or challah for a different texture.
  • Add a pinch of nutmeg or paprika to the egg mixture for extra flavor.
