Ingredients
Scale
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup packed brown sugar
1/4 cup granulated sugar
2 large eggs
2 cups milk
1/4 cup melted butter
1 teaspoon vanilla extract
2 medium apples, peeled and diced
1/2 cup chopped pecans (optional for topping)
1/4 cup all-purpose flour (for streusel)
1/4 cup brown sugar (for streusel)
1/4 cup cold butter, cut into small pieces (for streusel)
Instructions
Preheat your oven to 375 degrees F. Grease an 8×8 inch baking dish.
In a large bowl, combine the rolled oats, baking powder, cinnamon, salt, brown sugar, and granulated sugar. Mix well.
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fold in the diced apples. Pour the mixture into the prepared baking dish.
Prepare the streusel topping: In a small bowl, combine the flour and brown sugar. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
Sprinkle the streusel topping evenly over the oatmeal mixture. Add chopped pecans if using.
Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
Let the baked oatmeal cool for 10 minutes before cutting into squares and serving.
Notes
This recipe works well for meal prep; store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat individual servings in the microwave for 30 to 60 seconds until warm.
For a richer flavor, substitute half the milk with heavy cream.
