These Bang Bang Chicken Skewers offer a delightful fusion of juicy, grilled chicken coated in a creamy, spicy sauce. They are simple to prepare, perfect for weeknight dinners, BBQs, or as an impressive appetizer for your next gathering.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your spice preference)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)
  • Optional garnish: chopped green onions, sesame seeds

Instructions

  1. Prepare the chicken: Place the cubed chicken in a bowl. Toss with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated. Thread the seasoned chicken pieces onto the prepared skewers, leaving a small space between each piece.
  2. Make the Bang Bang Sauce: In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and sesame oil until smooth and creamy. This is your spicy, sweet sauce.
  3. Cook the skewers: Preheat your grill to medium-high heat. Lightly oil the grates. Place the chicken skewers on the hot grill. Cook for 4-6 minutes per side, turning occasionally, until the chicken is cooked through and has nice grill marks. Alternatively, you can air fry at 380°F (195°C) for 12-15 minutes, flipping halfway, or bake in an oven at 400°F (200°C) for 15-20 minutes.
  4. Sauce the chicken: Once the chicken is cooked, brush the skewers generously on all sides with the prepared Bang Bang Sauce while they are still warm.
  5. Serve: Arrange the sauced skewers on a platter. Garnish with chopped green onions and sesame seeds, if desired. Serve immediately with extra sauce on the side for dipping.
