Create a satisfying BLT Chicken Salad that merges the smoky crunch of bacon with creamy chicken salad. This recipe is fast, high in protein, and perfect for lunch or light dinner.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved or diced
  • 1/2 cup crisp lettuce (like romaine or butter lettuce), finely chopped
  • 1/4 cup celery, finely diced (optional, for crunch)
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. If using leftover chicken, proceed to the next step. If not, cook chicken breasts and shred them finely.
  2. Cook the bacon until crisp. Drain the bacon on paper towels, then crumble it into small pieces. Set aside.
  3. In a medium bowl, combine the shredded chicken, diced tomatoes, chopped lettuce, and optional celery.
  4. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth. This creates your creamy dressing.
  5. Pour the dressing over the chicken and vegetable mixture. Gently fold everything together until the chicken is evenly coated.
  6. Stir in most of the crumbled bacon, reserving a small amount for garnish.
  7. Taste the salad and adjust salt or pepper if needed.
  8. Serve immediately, or chill for 30 minutes to let the flavors combine. Garnish with the reserved bacon before serving.

Notes

  • For meal prep, keep the chopped lettuce separate until just before serving to maintain maximum crispness.
  • Use rotisserie chicken for an even quicker, no-cook chicken salad option.
  • Serve this savory chicken salad on toasted bread for a classic sandwich, in lettuce cups for a low-carb meal, or with crackers.
