Prepare this easy Overnight Blueberry French Toast Casserole the night before for a simple, impressive breakfast or brunch centerpiece. It features soft bread soaked in a rich custard with sweet blueberries.

  • 1 loaf (about 1 pound) French bread, challah, or brioche, cut into 1-inch cubes
  • 2 cups fresh or frozen blueberries
  • 8 ounces cream cheese, softened and cut into small cubes (optional, for richness)
  • 6 large eggs
  • 2 cups whole milk or half-and-half
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Zest of 1 lemon (optional, for brightness)
  • Powdered sugar, for serving

Instructions

  1. Lightly grease a 9×13 inch baking dish. Arrange half of the bread cubes evenly in the bottom of the dish.
  2. If using cream cheese, scatter the small cubes over the bread layer. Sprinkle all the blueberries over the bread and cream cheese layer. Top with the remaining bread cubes.
  3. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and lemon zest until well combined. This creates your rich custard base.
  4. Slowly pour the custard mixture evenly over the bread and berries in the baking dish, pressing down gently so the bread absorbs the liquid.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the bread to fully soak up the custard.
  6. When ready to bake, preheat your oven to 350°F (175°C). Remove the plastic wrap.
  7. Bake uncovered for 45 to 55 minutes, or until the casserole is puffed, golden brown on top, and the center is set (a knife inserted near the center comes out clean).
  8. Let the casserole rest for 10 minutes before slicing and serving. Dust generously with powdered sugar.

Notes

  • For a crisp topping, mix 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter (cubed), and 1/2 teaspoon cinnamon. Sprinkle this streusel over the top before baking.
  • This make-ahead breakfast casserole is excellent for holiday mornings or brunch parties.
  • Use Challah bread for the richest texture, as it holds up well to the custard soak.
