A creamy and spicy pasta dish featuring seasoned chicken and pasta in a rich sauce.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 8 ounces penne pasta
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Toss the chicken pieces with Cajun seasoning.
  2. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  3. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and red pepper flakes (if using). Cook, stirring, until sauce thickens slightly.
  6. Return chicken to the skillet. Add cooked pasta and toss to coat everything in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicier dish, add more red pepper flakes.
  • You can add sliced bell peppers or onions with the garlic for extra flavor and color.
  • This dish pairs well with a simple green salad.
