Easy Cauliflower Fried Rice (Low-Carb Weeknight Meal)

Make this quick cauliflower fried rice as a healthy, low-carb substitute for traditional rice. It is simple to prepare and works well for weeknight dinners or meal prep.

Ingredients

  • 1 large head cauliflower (or 1 bag frozen cauliflower rice, about 14 oz)
  • 1 tablespoon avocado oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 2 large eggs
  • 2 tablespoons tamari or low-sodium soy sauce
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon ground white pepper
  • 1 green onion, sliced (for garnish)

Instructions

  1. If using fresh cauliflower, cut it into florets and pulse in a food processor until it resembles rice grains. Do not over-process.
  2. If using frozen cauliflower rice, proceed to the next step.
  3. Heat the oil in a large skillet or wok over medium-high heat. Add the minced garlic and chopped carrots. Cook for 3 minutes until the carrots soften slightly.
  4. Add the cauliflower rice and frozen peas to the skillet. Cook, stirring frequently, for 5 to 7 minutes until the cauliflower is tender and any excess moisture has evaporated. You want it dry, not soggy.
  5. Push the cauliflower mixture to one side of the skillet. Crack the eggs onto the empty side. Scramble the eggs until just set, then mix them into the cauliflower.
  6. Stir in the tamari (or soy sauce), grated ginger, and white pepper. Cook for 1 minute, mixing everything together until heated through.
  7. Remove from heat. Taste and adjust seasoning if needed.
  8. Serve immediately, garnished with sliced green onions. This dish is a great alternative to traditional rice when following a keto meal plan delivery structure.

Notes

  • To prevent sogginess, cook the cauliflower rice over medium-high heat and do not cover the pan while cooking.
  • For added protein, add 1 cup of cooked chicken or shrimp during the last 2 minutes of cooking.
  • This recipe is naturally gluten-free when using tamari.
