  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 cup graham cracker crumbs, finely crushed

Instructions

  1. Prepare the strawberries: Gently wash and dry the strawberries. Slice each strawberry in half lengthwise. Use a small spoon or melon baller to carefully scoop out a small amount of the inner flesh from the cut side of each half, creating a small well for the filling. Set the strawberry halves on a serving platter lined with parchment paper.
  2. Make the cheesecake filling: In a medium bowl, beat the softened cream cheese until smooth. Gradually add the sifted powdered sugar and vanilla extract. Beat until the mixture is light, fluffy, and completely smooth.
  3. Fill the strawberries: Transfer the cream cheese mixture to a piping bag fitted with a star tip (or use a zip-top bag with a corner snipped off). Pipe a generous swirl of the cheesecake filling into the well of each strawberry half.
  4. Top and chill: Sprinkle the tops of the piped filling evenly with the finely crushed graham cracker crumbs. Place the platter in the refrigerator to chill for at least 15 minutes before serving. This helps the filling set slightly.
