This recipe tells the story of merging comfort food with Tex-Mex flavor. You create tender potatoes, seasoned ground beef, and gooey melted cheese in one skillet for a satisfying, easy weeknight dinner.

  • 2 pounds russet potatoes, peeled and diced into 1-inch pieces
  • 3 tablespoons olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Salsa, sour cream, or avocado slices (for serving)

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the diced potatoes and cook, stirring occasionally, for 10 to 12 minutes until they begin to brown and become tender.
  2. Push the potatoes to one side of the skillet. Add the ground beef to the empty side and cook, breaking it apart with a spoon, until fully browned. Drain off any excess grease.
  3. Stir the taco seasoning mix and water into the ground beef. Bring the mixture to a simmer and cook for 5 minutes, allowing the liquid to reduce slightly and the beef to absorb the flavor.
  4. Stir the seasoned beef and potatoes together evenly in the skillet.
  5. Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top of the potato and beef mixture.
  6. Place the skillet under a preheated broiler for 2 to 4 minutes, watching closely, until the cheese is completely melted and bubbly.
  7. Remove the skillet from the oven. Garnish with fresh cilantro. Serve immediately with your choice of salsa, sour cream, or avocado slices for a truly loaded potato experience.

Notes

  • For crispier potatoes, you can par-boil the diced potatoes for 5 minutes before adding them to the hot oil in the skillet.
  • This dish works well as a main course or a hearty side dish for a family gathering.
  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding the cheese and broiling.
