  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken (use chicken thighs for richer flavor)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • 1/4 cup crushed butter crackers or panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked wild rice, shredded chicken, cream of chicken soup, cream of mushroom soup, chicken broth, heavy cream, frozen vegetables, chopped onion, thyme, and pepper. Mix until all ingredients are evenly coated.
  3. Pour the mixture into the prepared baking dish and spread it into an even layer.
  4. If using, sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you prefer a crunchy topping, mix the cheese with the crushed crackers or panko and sprinkle over the top.
  5. Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
  6. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For a richer flavor, substitute the cream of chicken soup with homemade cream sauce.
  • You can use leftover roasted chicken or quickly poach chicken breasts for this recipe.
  • Prepare this dish ahead of time by assembling it completely, covering it, and refrigerating it for up to 24 hours before baking. Add 10 minutes to the baking time if baking directly from the refrigerator.
