2 cups cooked, shredded chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup chicken broth
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup uncooked long-grain white rice
1 cup fresh or frozen broccoli florets
2 cups shredded sharp cheddar cheese, divided
1/2 cup milk
1/4 cup butter, melted (for topping)
1 cup crushed Ritz crackers (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, chicken broth, onion powder, garlic powder, and black pepper. Stir until smooth.
Add the uncooked rice, broccoli florets, cooked chicken, and 1 1/2 cups of the shredded cheddar cheese to the soup mixture. Stir gently until all ingredients are evenly coated.
Pour the mixture into the prepared baking dish.
In a small bowl, mix the melted butter with the crushed Ritz crackers. Sprinkle this topping evenly over the casserole mixture.
Cover the baking dish tightly with aluminum foil. Bake for 45 minutes.
Remove the foil. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
Return the casserole to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
Let the casserole rest for 5 minutes before you serve it.
Notes
For a richer flavor, substitute half of the milk with heavy cream.
If you are using frozen broccoli, do not thaw it before adding it to the mixture.
This dish makes excellent freezer meal prep; assemble completely, cover tightly, and freeze before baking. Thaw overnight in the refrigerator before baking as directed, adding 10 minutes to the covered bake time.
