  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 tablespoon taco seasoning mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional Toppings: Shredded cheese, salsa, avocado slices, sour cream

Instructions

  1. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the diced chicken and cook until lightly browned, about 4 minutes.
  2. Stir in the taco seasoning, cumin, chili powder, and salt, coating the chicken evenly. Cook for 1 minute until fragrant.
  3. Add the uncooked rice, chicken broth, black beans, and diced tomatoes with green chilies to the skillet. Stir everything together well.
  4. Bring the mixture to a boil. Once boiling, cover the skillet tightly with a lid or aluminum foil.
  5. Reduce the heat to low and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  6. Remove the skillet from the heat and let it stand, covered, for 5 minutes.
  7. Fluff the rice and chicken mixture gently with a fork.
  8. Divide the mixture into bowls. Top with fresh cilantro and your preferred toppings like salsa, avocado, and cheese.

Notes

  • For a cilantro-lime rice flavor, stir in the juice of one lime after the rice has finished cooking.
