1 pound rotini pasta
2 cups cooked chicken, chopped
1 head romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1/4 cup croutons
For the Dressing:
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon Worcestershire sauce
Salt and black pepper to taste
Instructions
Cook pasta according to package directions. Drain and rinse with cold water.
In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce. Season with salt and pepper.
Add the cooked pasta, chopped chicken, and half of the Parmesan cheese to the bowl with the dressing. Toss to combine.
Just before serving, add the chopped romaine lettuce and croutons. Toss gently to coat the lettuce.
Garnish with the remaining Parmesan cheese.
Notes
For a lighter dressing, use only Greek yogurt and add a little milk or water to reach desired consistency.
To keep the lettuce crisp, add it and the croutons right before you plan to serve the salad.
This salad can be made ahead of time. Store the dressing and pasta mixture separately from the lettuce and croutons. Combine just before serving.
