1 pound ground chicken
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon chili garlic sauce
1/4 cup water chestnuts, finely chopped
8 large butter lettuce or iceberg lettuce leaves
2 green onions, thinly sliced, for garnish
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Add minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and chili garlic sauce.
Pour the sauce mixture over the chicken. Stir to combine and cook for 2-3 minutes until the sauce thickens slightly.
Stir in the chopped water chestnuts.
Spoon the chicken mixture into the prepared lettuce cups.
Garnish with sliced green onions.

For crispier lettuce, rinse the leaves and pat them completely dry with paper towels.
