  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup chopped water chestnuts
  • 1/4 cup chopped green onions
  • 8 large butter lettuce leaves
  • Optional toppings: chopped peanuts, sriracha

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking it up with a spoon, until browned.
  2. Add garlic and ginger to the skillet and cook for 1 minute more until fragrant.
  3. Stir in hoisin sauce, soy sauce, rice vinegar, and sesame oil. Bring to a simmer and cook for 2-3 minutes, until the sauce thickens slightly.
  4. Stir in water chestnuts and green onions.
  5. Spoon the chicken mixture into lettuce leaves.
  6. Add optional toppings as desired.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
