1 cup cooked shredded chicken
1 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar cheese
1 tablespoon butter or oil
Instructions
Heat butter or oil in a skillet over medium heat.
Place one tortilla in the skillet.
Sprinkle half of the cheeses over the tortilla.
Top with shredded chicken.
Sprinkle the remaining cheese over the chicken.
Place the second tortilla on top.
Cook for 2-3 minutes, until the bottom is golden brown and cheese starts to melt.
Carefully flip the quesadilla.
