Create the sweet, creamy, and crunchy hybrid salad inspired by Chicken Salad Chick. This recipe combines tender chicken with sweet grapes in a rich dressing, perfect for potlucks or light lunches.

  • 2 cups cooked, shredded chicken breast
  • 2 cups red seedless grapes, halved
  • 1 cup green seedless grapes, halved
  • 1/2 cup celery, finely chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup pecans, chopped
  • 2 tablespoons brown sugar, for topping

Instructions

  1. Place the shredded chicken in a large mixing bowl. Add the halved red and green grapes and the chopped celery. Set aside.
  2. In a separate medium bowl, beat the softened cream cheese until smooth.
  3. Add the sour cream, mayonnaise, granulated sugar, vanilla extract, and salt to the cream cheese. Mix until the dressing is completely smooth and creamy.
  4. Pour the dressing mixture over the chicken and grape mixture. Fold gently until all ingredients are evenly coated.
  5. Stir in the chopped pecans.
  6. Cover the bowl and chill the salad in the refrigerator for at least 2 hours to allow the flavors to meld.
  7. Before serving, sprinkle the top evenly with the brown sugar. Serve cold with crackers or lettuce cups.

Notes

  • For the best texture, chill all ingredients, especially the cream cheese and sour cream, slightly before mixing the dressing.
  • You can substitute walnuts for pecans if desired.
  • This salad is excellent made ahead of time; prepare it up to 24 hours in advance, but add the brown sugar topping just before serving.
