  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups Arborio rice
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon zest

Instructions

  1. Season the chicken pieces with salt, pepper, and paprika.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the white wine (or broth) and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Stir in the 1 cup of chicken broth and the Arborio rice. Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and cook for 15 minutes, stirring occasionally to prevent sticking.
  6. Uncover the skillet. Stir in the heavy cream, Parmesan cheese, and lemon juice. Cook, stirring constantly, until the rice mixture thickens into a creamy sauce, about 3 to 5 minutes.
  7. Return the cooked chicken to the skillet. Stir gently to coat the chicken in the sauce.
  8. Remove the skillet from the heat. Stir in the lemon zest and fresh parsley.
  9. Serve immediately with extra grated Parmesan cheese on top.

Notes

  • For a richer flavor, substitute half of the heavy cream with cream cheese.
  • If you prefer shrimp, substitute the chicken with 1 pound of large shrimp, adding them only during the last 3 minutes of cooking.
  • Use fresh lemon juice for the best bright flavor in your garlic butter chicken sauce.
