  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken breast (use rotisserie chicken for speed)
  • 1 cup diced potatoes (Yukon Gold or Russet)
  • 1 cup frozen green beans
  • 1 cup frozen corn kernels
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 5 to 7 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth. Add the diced potatoes, dried thyme, and bay leaf. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot partially, and simmer for 10 minutes, or until the potatoes are tender when pierced with a fork.
  6. Stir in the shredded chicken, frozen green beans, and frozen corn. Cook for another 5 minutes, allowing the chicken to heat through and the frozen vegetables to cook.
  7. Remove and discard the bay leaf. Season the soup with salt and pepper to your preference.
  8. Ladle the soup into bowls and garnish with fresh chopped parsley before serving.
