  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Christmas sprinkles (red, green, white jimmies or shapes)
  • 1/4 cup extra Christmas sprinkles for rolling/topping

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. You need about 3 minutes with an electric mixer.
  2. Beat in the egg and vanilla extract until just combined. Scrape down the sides of the bowl as needed.
  3. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Gently fold in the 1/2 cup of Christmas sprinkles until they are evenly distributed throughout the dough.
  6. For drop cookies: Scoop rounded tablespoons of dough and roll them lightly into balls. Roll each ball in the extra sprinkles until coated. Place on a baking sheet lined with parchment paper.
  7. For cutout cookies: Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  8. Preheat your oven to 350°F (175°C).
  9. If using cutouts, roll the chilled dough out to 1/4-inch thickness on a lightly floured surface. Cut shapes using cookie cutters, dip the tops in extra sprinkles, and place on a parchment-lined baking sheet.
  10. Bake for 8 to 10 minutes, or until the edges are set but the centers remain soft.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the softest cookies, avoid overbaking. They should look slightly underdone in the center when you remove them from the oven.
  • If you prefer a more intense vanilla flavor, substitute 1/2 teaspoon of vanilla extract with 1/4 teaspoon of almond extract.
  • These buttery holiday cookies freeze well both baked and unbaked.
  • If you are making cutout cookies and the dough gets too soft while cutting, return it to the refrigerator for 10 minutes.
