Make soft, gooey cinnamon roll bites fast. These require no yeast and bake up quickly, coated in a simple cinnamon sugar mixture. They are perfect for a sweet breakfast or dessert treat.

  • 1 (16.3 ounce) can refrigerated biscuit dough
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking pan.
  2. Unroll the biscuit dough and separate the biscuits. Cut each biscuit into four equal pieces. You should have about 20 pieces total.
  3. In a shallow bowl, mix the granulated sugar and ground cinnamon together well.
  4. In a separate small bowl, melt the butter.
  5. Dip each dough piece first into the melted butter, letting excess drip off, then roll it thoroughly in the cinnamon sugar mixture until fully coated.
  6. Arrange the coated dough pieces close together in the prepared baking pan.
  7. Bake for 12 to 15 minutes, or until the bites are golden brown and cooked through.
  8. While the bites cool slightly, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  9. Drizzle the glaze over the warm cinnamon roll bites before serving.

Notes

  • For an ultra-gooey center, bake the bites in a pan lined with a thin layer of melted butter mixed with a tablespoon of brown sugar before adding the dough pieces.
  • If you prefer a richer flavor, substitute half of the granulated sugar in the coating with packed light brown sugar.
  • These are best eaten warm, but you can store leftovers in an airtight container at room temperature for up to two days.
