A comforting and easy meatloaf recipe perfect for a fall dinner, filling your home with warm aromas.

  • 2 pounds ground beef (80/20 blend recommended)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 2 large eggs, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup, plus more for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, eggs, salt, pepper, 1/4 cup ketchup, Worcestershire sauce, and thyme.
  3. Mix the ingredients gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
  4. Shape the mixture into a loaf shape on a baking sheet or in a loaf pan.
  5. Spread additional ketchup evenly over the top of the meatloaf.
  6. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, you can add 1/4 cup of finely chopped bell pepper or celery with the onion.
  • If you don’t have breadcrumbs, you can use crushed crackers or oats.
  • Serve with mashed potatoes and your favorite vegetables for a complete meal.
